MINI CORN DOG BITES

 

With summer right around the corner you can’t go wrong with these mini corn dog bites! They’re the perfect appetizer for any bbq or gathering! Not only will the kids love them but the adults will too! This recipe makes 24 mini corn dog bites! You can surely double or triple the recipe if needed! 

Ingredients:
  • 1 pkg JIFFY Corn Muffin Mix 
  • 1 egg slightly beaten 
  • 2 tbsp melted butter
  • 1/3 cup cold milk 
  • 4 hop dogs; each one cut into 6 pieces
  • For serving: ketchup, mustard, any other favorite toppings
Directions:
  1. In a bowl whisk together corn muffin mix, melted butter milk & eggs!
  2. Slice up your hot dogs (each one should be cut into 6 even pieces)
  3. Spray your mini muffin tin with nonstick spray 
  4. Evenly scoop your corn muffin mixture into each tin 
  5. Place a piece of hot dog in to the center of each one, pressing down slightly 
  6. Bake at 400 degrees for 8-12 min or until golden brown. NOTE: cooking times may vary slightly depending on how your oven bakes
  7. Remove from oven, let them stand for a couple minutes
  8. Your can use a toothpick to help you pop them out of the muffin tin 
  9. Serve them with ketchup, mustard or any of your other favorite toppings & enjoy!
