FRENCH ONION CHICKEN & RICE BAKE
This French onion chicken & rice bake will have your whole family coming back for seconds! It’s so easy to make during the busy weeknight and it’s a must to add in your weeknight meal rotation! It also makes plenty for leftovers!
Ingredients:
- 2 cups minute white rice (cooked accordingly to the package. You can use brown rice also)
- 3 cups cooked shredded chicken (I used a rotisserie chicken, but you can also cook & shred your own)
- 1 cup refrigerated French onion sour cream dip (I used Cabot brand but there’s lots of others too)
- 1 (10.5 oz) can cream of chicken soup
- 2 cups shredded sharp cheddar cheese
- French fried onions (enough to cover the top of your chicken bake, I used about 1/2 of the container)
Directions:
- Preheat your oven to 350 degrees
- In a bowl combine your cooked rice, shredded chicken, shredded cheese, sour cream dip & chicken soup
- Spray your baking dish with cooking spray (9x13”) and add in your chicken mixture
- Evenly top with your French fried onions
- Bake for 30 min or until your chicken bake is hot! NOTE: about halfway into baking I covered my loosely with foil so my onions didn’t get too crispy/burned on top
- Serve with your favorite sides such as a salad or veggies & enjoy!
