STRAWBERRY SHORTCAKE ICE CREAM BARS

Whenever I got ice cream from the ice cream truck the strawberry shortcake ice cream bars were on my list of favorites! This homemade version is only requires 4 ingredients and seriously tastes just like the original ones! These are also great to make for parties this summer and can easily be whipped up in no time! 


Ingredients:
  • 35 Golden Oreos 
  • 1 (0.7 oz) package of freeze dried strawberries or about 1/2 cup
  • 6 tablespoons salted butter (melted)
  • 1/2 gallon of your favorite strawberry ice cream (softened)
Directions:
  1. In your food processor pulse your Oreos until a fine crumble forms
  2. Add in your freeze dried strawberries & pulse to combine 
  3. Lastly add in your melted butter and pulse to combine everything; your Oreo strawberry mixture should be moist 
  4. Line an 8x8 baking dish with parchment paper
  5. Add in half of your Oreo strawberry mixture into the bottom of your dish and firmly press down evenly 
  6. Add on your softened strawberry ice cream and spread out evenly 
  7. Top with your remaining Oreo strawberry mixture and spread out evenly across the top 
  8. Place in the freezer overnight or for at least 2-3 hours 
  9. When ready to serve, lift up your parchment paper and remove ice cream from dish 
  10. Slice up your bars & enjoy! 
Note: For storing, I recommend wrapping each ice cream bar individually in plastic wrap and placing them all in an airtight bag in the freezer!
