STRAWBERRY SHORTCAKE ICE CREAM BARS
Whenever I got ice cream from the ice cream truck the strawberry shortcake ice cream bars were on my list of favorites! This homemade version is only requires 4 ingredients and seriously tastes just like the original ones! These are also great to make for parties this summer and can easily be whipped up in no time!
- 35 Golden Oreos
- 1 (0.7 oz) package of freeze dried strawberries or about 1/2 cup
- 6 tablespoons salted butter (melted)
- 1/2 gallon of your favorite strawberry ice cream (softened)
Directions:
- In your food processor pulse your Oreos until a fine crumble forms
- Add in your freeze dried strawberries & pulse to combine
- Lastly add in your melted butter and pulse to combine everything; your Oreo strawberry mixture should be moist
- Line an 8x8 baking dish with parchment paper
- Add in half of your Oreo strawberry mixture into the bottom of your dish and firmly press down evenly
- Add on your softened strawberry ice cream and spread out evenly
- Top with your remaining Oreo strawberry mixture and spread out evenly across the top
- Place in the freezer overnight or for at least 2-3 hours
- When ready to serve, lift up your parchment paper and remove ice cream from dish
- Slice up your bars & enjoy!
Note: For storing, I recommend wrapping each ice cream bar individually in plastic wrap and placing them all in an airtight bag in the freezer!
