JALAPEÑO POPPER CHICKEN SLIDERS
Okay these might just be one of my favorite dinners on the weeknight meal rotation list! I’ve always loved jalapeño poppers as appetizers, so why not make it into a meal! You can save time by using a rotisserie chicken instead of shredded chicken breasts like I did, but that’s just what I had on hand! I also took the seeds out of my jalapeños, but if you want to add some kick to these sliders you can leave the seeds in! Nonetheless, these are creamy, cheesy & delicious! Serve these with all your favorite sides & everyone will be sure to love!
Ingredients:
- 1 pack of King’s Hawaiian Rolls (12 rolls total)
- 6-7 strips of bacon (cooked & crumbled)
- 8 oz cream cheese (softened)
- 2 cups shredded cheddar jack cheese (divided)
- 2 large chicken breasts cooked & shredded (or 1 rotisserie chicken)
- 2 jalapeños (seeded & diced)
- 2 tbsp melted butter (salted or unsalted)
- 1/2 tsp garlic powder
- 1/2 tsp dried parsley
Directions:
- In a large bowl mix together your cream cheese, 1 cup shredded cheese, jalapeños, bacon & shredded chicken
- Spray a 9x13” baking dish with nonstick spray
- Slice your Hawaiian rolls in half and place the bottom half of your rolls in your baking dish
- Evenly spread on your jalapeño popper chicken mixture
- Place the tops of your rolls back on
- In a small bowl combine your melted butter, garlic powder & parsley
- Brush your garlic butter mixture on your rolls
- Bake at 400 degrees for 20 min or until your rolls are golden and your cheese is hot & melted. NOTE: halfway into baking your rolls might start to get “too” golden, simply loosely cover your baking dish with foil & continue baking
- Slice them up & serve them with all your other favorite dinner sides!
