EASY MANGO COBBLER
If you’re looking for an easy yet delicious dessert recipe this it it! This is also a super easy recipe to double if you’re making it for a larger crowd! Not to mention, it only requires a few ingredients!
Ingredients:
- 4 cups fresh mango chunks (you can also use frozen mango if you’d like but I prefer fresh)
- 1/8 cup sugar
- 1/8 cup flour
- 1 tsp lemon juice
For the crumble topping:
- 1 cup oats (I used the Quaker 1-minute oats)
- 1/3 cup flour
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- 1 stick cold butter (cubed)
Optional: your favorite ice cream for serving
Directions:
- In your bowl add your mango, sugar, flour & lemon juice; mix well to combine
- In a separate bowl combine oats, flour, brown sugar, vanilla and butter (this might be hard to mix since the butter is cold, but you can use your fingers or a fork)
- Spray your baking dish with nonstick spray, pour in your mango chunks & top with your brown sugar oat mixture; spreading it out evenly across the top
- Bake at 350 for 40-45 min, take it out and let it cool down a bit before slicing into it. Top it with your favorite ice cream and enjoy!
- Note: for storing, I placed the leftovers in an air tight container in the fridge
