TUSCAN GARLIC CHICKEN PITA BREAD PIZZAS
If you’re looking for a quick an easy lunch or dinner this will hit the spot! Not to mention the homemade Alfredo sauce really tops it off and brings all the flavors together! You can also add other toppings to this too, if you’re not a fan of sun dried tomatoes or spinach! I only made two, but this recipe makes enough sauce for about 6 pita pizzas! Also, if you’re left with any sauce you can certainly use it for a side of dipping!
Ingredients:
- 1 package of your favorite brand pita bread
- 2 cups shredded rotisserie chicken (you could also use breaded chicken if you have it on hand)
- Sun dried tomatoes (as much or as little as you like)
- Baby spinach (as much as you’d like)
- 2 cups shredded mozzarella
For the Alfredo Sauce:
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp garlic powder
- 1 1/2 tsp Italian seasoning
- 2/3 cup grated Parmesan cheese
- 1/4 tsp black pepper
- 1-2 tbsp flour
Directions:
- Preheat oven to 350
- In your saucepan add your chicken broth, heavy cream, garlic powder, Italian seasoning, Parmesan & black pepper
- Let simmer and whisk in your flour so the sauce thickens up; set aside
- Lay out however many pita breads you’re going to make
- Spoon 2-3 tbsp of Alfredo sauce onto each pita bread and spread out evenly
- Add on shredded chicken, sun dried tomatoes, spinach & shredded mozzarella
- Bake at 350 for 10-12 min or until the cheese is hot and bubbly
- Slice it up and serve! If you have extra Alfredo sauce I definitely recommend dipping your pizza in it!
