HONEY MUSTARD POTATOES
These are the perfect side dish for any meal and only require a handful of ingredients you most likely already have at home! I am a HUGE fan of honey mustard and when I say HUGE I mean it! It’s definitely always been one of my favorite dipping sauces and flavor on chips/pretzels! These honey mustard potatoes have all the flavors and everyone will be sure to love!
Ingredients:
- 1 lb baby or fingerling potatoes
- 2 tbsp extra virgin olive oil (EVOO)
- 1/4 cup chicken broth
- 1.5 tbsp honey
- 1/4 cup Dijon mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- Salt & pepper to taste
- Dried or fresh parsley/chives for garnish at the end!
Directions:
- Wash & add your potatoes to a pot of salted water & par-boil them until the potatoes are just tender enough to pierce them with a fork
- Drain them and set aside
- In a bowl add 1 tbsp olive oil, Dijon mustard, honey, chicken broth & seasonings! Whisk together to combine
- In a skillet add 1 tbsp olive oil and sauté your potatoes until the skin is golden brown & crispy
- Add in your honey mustard glaze and cook on medium heat until the glaze thickens up
- Put your potatoes in your serving dish, garnish with parsley/chives & serve as a side with your favorite meal!
