BLUEBERRY PANCAKE FRENCH TOAST BAKE
This breakfast casserole is just plain DELICIOUS! You get the best of both worlds, buttery fluffy pancakes, but baked like warm & delicious french toast! You can add different berries if blueberries aren’t your thing or even sub for chocolate chips!
Ingredients:
- About 20 medium sized pancakes (I made mine homemade & the recipe is on my blog page, but you can certainly use pancake mix)
- 1 cup blueberries
- 6 eggs
- 1 cup heavy cream
- 1.5 cups milk
- 1/2 cup sugar
- 1 tbsp vanilla extract
- For garnish: powdered sugar, syrup or more berries
For the crumb topping:
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup butter (melted)
Directions:
- Slice your pancakes in half and place them in your baking dish (flat side down)
- Pour your blueberries over pancakes
- In a bowl whisk together eggs, heavy cream, milk, sugar & vanilla extract; pour over your pancakes
- In a small bowl mix together flour, brown sugar, cinnamon & melted butter; evenly sprinkle on your pancakes
- Cover & refrigerate overnight or for 2 hours
- Remove from fridge, uncover & let sit on the counter until your oven preheats to 350 degrees
- Blake for 45-50 min
- Top with powdered sugar & maple syrup & enjoy!
