ROASTED HEART POTATOES
These are simply roasted potatoes but in the shape of a heart! So cute just to make but especially for Valentine’s Day! Also definitely don’t throw those scraps away from the potatoes when cutting them out, you can save them and roast them too or turn them into mashed potatoes!
Ingredients:
- 4 medium russet potatoes (or more if you’d like)
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/4 tsp black pepper
- 2 tbsp Parmesan cheese
- Fresh rosemary
- Salt to taste
Directions:
- Preheat oven to 350 degrees
- Wash and peel your potatoes (you can leave the skin on if you prefer, up to you!)
- Slice up all your potatoes
- My cookie cutters are from Amazon and I’m using the smallest heart in the set
- Cut as many hearts as you can out from all your potato slices and use excess scrapes to make mashed potatoes or you can roast them too!
- In a pot salt your water and bring to a boil
- Add in your heart potatoes and parboil them for 3 min! This step will allow your potatoes to get nice and crispy when roasting, while maintaining a soft inside
- Drain your potatoes and add them into a mixing bowl
- Add in your seasoning and olive oil
- Mix well and add potatoes to a parchment paper lined baking sheet. Spread them out evenly so they’re not overlapping
- Roast for 15 min then flip and roast for another 10 (Note: everyone’s oven cooks differently so adjust time accordingly)
- Serve as a side dish and enjoy!
