COWBOY QUESO DIP
Okay so first of all, let me just announce that any recipe in a crockpot is a recipe for me lol! I love how there is minimal cleanup and how you can just toss your ingredients in and come back to a beautiful meal! With the Super Bowl coming up, this cowboy queso dip is the perfect appetizer that will be a big hit on game day!
Ingredients:
- 1/2 lb ground beef
- 1/8 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 3/4 cup of your favorite beer
- 1/2 cup pepper jack cheese (shredded)
- 16 oz Velveeta cheese (cubed)
- 1 14.5 oz can of Rotel tomatoes
- 1 cup black beans
- 1/4 cup red onion (finely diced)
- Optional for topping: 1/4 cup fresh cilantro
- Blue corn tortilla chips or veggies for serving
Directions:
- Brown your ground beef, drain the grease
- In your crock pot add cooked ground beef, pepper jack, Velveeta, seasonings, red onion, black beans, beer and tomatoes
- Stir to combine ingredients
- Cover and cook on low for 4-5 hours
- Serve with tortilla chips or use as a topping for tacos, nachos, fajitas,etc
