BROWN SUGAR POP TARTS

So not too long ago, I made the giant strawberry pop tart on my Instagram page! I got lots of requests to make these Brown Sugar Cinnamon ones; which are definitely one of my favorite flavors!! These are fun & easy to make especially if you have the kiddos around! You can make these and really add any filling you’d like it’s up to you! This recipe makes 12 pop tarts, but you can certainly double it, if you want to make more! I stores these in an air tight container on the kitchen counter, but you can also store them in the fridge as well!

Ingredients:
For The Dough:
  • 1 box Pillsbury Pie Crust (which contains 2 pie crusts)
  • NOTE: you can make homemade dough if you prefer!
For The Filling:
  • 3/4 cup light or dark sugar (I used light)
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon
  • 1 tbsp all purpose flour
  • 2 tbsp salted butter
For The Icing:
  • 1 cup powdered sugar
  • 1/2 tbsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 1/2 tbsp cold water
Directions:
  1. To make the filling, mix together brown sugar, vanilla, cinnamon, flour & butter; set aside
  2. Let your Pillsbury pie crusts come to room temperature; unroll the first one & use your rolling pin to roll it out as big as you can (without making it too thing)
  3. Cut into a rectangle shape & repeat steps for second piece of dough
  4. Lay your dough sheets pan top of each other & cut out 12 rectangles (mine were about 4”x3”)
  5. Remove your top dough pieces, place on separate cutting board; set aside
  6. To your bottom dough pieces add 1 tbsp of brown sugar cinnamon filling into the middle of each one
  7. Press the filling down leaving room around the edges
  8. Brush all edges around the filling with egg wash (save the extra egg wash, you’ll need it again)
  9. Place top pieces of dough back on top & seal up edges with a fork
  10. Place your pop tarts on a parchment lined baking sheet & poke holes in the top
  11. Refrigerate for 30 min, take them out & brush them with your remaining egg wash
  12. Bake at 400 for 20 min or until golden!
  13. While they’re baking make the icing! Whisk together powdered sugar, vanilla extract, cinnamon & water
  14. Once your pop tarts are done baking let them cool completely before icing & enjoy!
